Well you could try Stairway To Heaven, it's not that hard, if you want something acoustic, the Unplugged album's version of Layla (Eric Clapton live with an acoustic only).

I'd say Layla, because it's not like the original song, it's like a whole different song, just with the same lyrics.

Also check out Alberta from that album if you want to go acoustic.
